Get yoh beans on #veggietuesdays
Another easy recipe I tried out for veggie tuesdays, it is super filling and the hubby enjoyed them as well! I made these right after a long gym session, and they were super easy to whip up and were devoured quickly. Also, I might add, a very economical choice vs traditional beef burgers. One can of black beans was only 75 cents! And two cans is more than enough for 2-3 people.
Black Bean Burger Recipe:
Ingredients:
-2 cans of black beans (rinsed and drained)
-1/2 cup of breadcrumbs
-1 whole egg
-2 tsp of ground cumin (add any other spices you like)
-1 yellow onion chopped
-4-5 cloves of garlic
-2 tablespoons of fresh chopped parsley (add any other herbs you like)
-1/4 tsp of chilli powder (or to taste)
- salt and pepper to taste
-1/2 cup of grated carrot (optional)
Directions:
-rinse and drain both cans of black beans
-In a food processor/blender, combine onion, garlic, parsley, egg, and 1 can of black beans (a lil chunky)
-In a separate bowl, add the remaining ingredients - breadcrumbs, 2nd can of black beans, cumin, salt, pepper and carrot *I would mash up the black beans a little bit so they are easy to mould.
-Form into patties, and add more breadcrumbs if mixture is too wet
-Heat skillet with vegetable oil and cook each side for 6 minutes or until golden brown.
That's it baby!!!
I ate it with avocado slices, some aioli and spinach on a multigrain bun, but you could just as easily eat it in a lettuce wrap and I think it would be just as good. I also plan to utilize the leftover beans to make enchiladas a different day!
