Coconut Fruit Pops #summereats
Hey ya'll, it's officially spring in Australia...or so I'm told. It's basically mid 20s here, so its always warm, especially when you're out in the sun, it feels like Canadian summer!
I saw a picture of these coconut milk fruit popsicles on pinterest that looked so pretty, so I decided to give them a try! The original recipe can be found here: http://www.thisrawsomeveganlife.com/2013/04/fruit-thyme-popsicles-with-coconut-milk.html
I also wanted a non dairy dessert, since milk doesn't agree with me - and nowadays I hear a lot of people also avoid dairy or opt for lactose free options. I think my next attempt will be chocolate banana nice cream as the vegans call it, so stay tuned for that.
Anyway, this recipe is super easy and flexible to switch up with different fillings, as I did. Keep reading for the full recipe:

Ingredients:
-1 can of light coconut milk/almond milk
-1/4 cup of honey or any sweetener you like
-frozen blue berries
-frozen mango
-sliced strawberries
-1 tablespoon of lemon zest
-1 tablespoon of lime zest
Directions:
First of all you'll need something to pour the coconut goodness into, so I got these at a department store, but you can also use paper cups or ice cube trays.

1. Mix coconut milk/almond milk with the honey in a container you can easily pour into the moulds later. Give it a taste test, it needs to be fairly sweet, because when you freeze the mixture it will lose a bit of its sweetness (don't know why/how this happens, but ask science)
I added a few tablespoons of stevia to get the desired sweetness.

2. Add your berries into the containers, a few blueberries and strawberries with a pinch of the lime/lemon zest. I find that adding lime/lemon zest to anything with berries instantly brightens the taste, and adds a lil pop. Then fill with the coconut milk mixture, leaving about half inch of room to add more berries. Then top up the remaining mould with the coconut mixture.
It looks prettier when the berries are dispersed throughout the popsicle.

3. I didn't want to use the popsicle holders that came with the moulds, so I used popsicle sticks instead. I found them at the craft section of the department store. I covered the container with saran wrap and then just poked the popsicles through so they stood up straight.
Let the mixture freeze overnight and then use some hot water to get them out once they are fully frozen.
